The beautiful Damascus pattern is the result of repeatedly folding and forging 33 layers of stainless steel on each side of the blade. The finished blades are then sandblasted and polished to bring out their unique lines. The blade is made of cemented carbide steel VG-10 as the core material, and 33 layers of stainless steel are layered on both sides of the blade to form a forged product. Kasumi Damascus knives, which are carefully finished one by one by a skilled craftsman, have a long-lasting sharpness and can be used for generations.
A sashimi knife is used to slice raw, boneless fish and seafood into delicate, razor-thin pieces for sashimi and sushi. Its long, single-bevel blade allows chefs to make a single, continuous pull-cut, preserving the fish's cellular structure, glossy texture, and flavor.

Kasumi which means “mist”, refers to the haze or cloudy look of the soft iron body of the blade, which provides contrast to the high gloss appearance of the carbon steel. Skilled Japanese Craftsmen forge Kasumi knives by joining a piece of soft iron with a piece of carbon steel. After forging, hammering, and shaping, the carbon steel becomes the blade’s edge, while the softer iron portion becomes the body and spine of the blade. The end result is an extremely sharp Kasumi knife that is both easy to sharpen and holds a sharp edge longer.
Kasumi Tora knives are handmade by knife-making specialists and crafted in the same manner as traditional Japanese swords. The knife is carefully finished, piece by piece, throughout its process by the handwork of skilled craftsmen.
